When you can't decide between having Taco's or Mac and Cheese...I give you my Taco Mac!

Ingredients
  • Chickpea protein pasta shells, @eatbanza
  • Grass-fed ground beef
  • Queso of choice {I used vegan queso}
  • Fresh Pico
  • Dollop of organic sour cream @greenvalleyorganics
  • Lime @sietefoods Tortillas Chips
Directions
  • Step 1 Boil a box of @eatbanza chickpea pasta shells {25g/serving}

  • Step 2 Cook about a pound of ground beef in a skillet, add taco seasoning of choice

  • Step 3 Once the pasta is cooked to al dente, about 5 mins., reserve some pasta water, and drain. 

  • Step 4 Add drained pasta to the same warm pot with 1/4 cup reserved pasta water, cooked taco beef, and as much queso as you desire.
  • Step 5 Top with favorite taco toppings! Enjoy.
