OAT my goodness, happy FRY-day! OATMEAL BOWL W/ SWEET POTATO FRIES & YOGURT is totally acceptable for Fry-day, am I right?! Have you ever had a sweet potato yogurt bowl?? You should. I couldn't stop dipping the fries in the yogurt!
Sweet Potato Fries Oatmeal Bowl
Ingredients
- For the fries:
- 1 Japanese sweet potato
- High-heat cooking oil
- Cinamon
- Pink Salt
- Coconut sugar *optional

- For the Oats:
- 1/2 C. Quick Oats
- 1 Tbl. Chia seeds
- 1 Tbl. hemp seeds
- 1/2 Tsp. Cinnamon
- 1/2 milk of choice
- 1 tsp. of Madagascar Vanilla @simplyorganicfoods
- Pink salt to taste
- *
- Toppings:
- 1/4 cup plain cultured yogurt @nancysyogurt
- Cinnamon Vanilla Bean Cashew Butter @juliesreal {any nut butter of choice will work}
Directions
- Step 1 Cut sweet potato into fries.
- Step 2 Spread on a baking sheet and spray with @chosenfoods avocado oil.
- Step 3 Bake 400, 15-20 minutes, flipping halfway through.
- Step 4 Immediately after, sprinkle with pink salt and cinnamon. *{if you like them sweet, add some coconut sugar}
- Step 5 For the Oats: On the stovetop cook the oats with milk, chia seeds, 3-5 mins
- Step 6 When oatmeal is done, stirred in vanilla, dash of pink salt.
- Step 7 Serve with fries, yogurt & nut butter. Enjoy!
