Roasted Purple Cabbage and Fried Egg Bowl

I'm also a big fan of purple cabbage. One of my favorite ways to cook it, is to simply roast it, and add some flavor like coconut Aminos. If you haven't heard of Coconut Aminnos, I'm here to tell you to put it on your next grocery list! It's a staple in my house, and is a great substitute for soy sauce! It's gluten free, soy free, and is 50% less in sodium than your typical soy sauce.

Roasted Purple Cabbage and Fried Egg Bowl

Ingredients
  • 1/2 Cup chopped purple cabbage
  • 1 Tbl. coconut aminos {healthy sub for soy sauce}
  • 1 whole egg
  • 1/2 tsp. of ghee {or high heat cooking oil or grass-fed butter}
  • 1/2 avocado
  • Pea shoots & watermelon radish for garnish
  • Pink Salt and pepper to taste
Directions
  • Step 1 Chop purple cabbage, spray with cooking spray, and roast on 385 for 10 minutes.
  • Step 2 While the cabbage is roasting: get a cast-iron skillet hot, and add a dollop of ghee.
  • Step 3 Crack egg into the hot ghee, then turning down the heat to medium-low.
  • Step 4 Let egg cook through for about 5 minute until the edges get crispy and the egg whites are fully cooked. May need to cover with a lid.
  • Step 5 Finish roasted purple cabbage with a splash of Coconut Aminos for flavor.
  • Step 6 Serve with sliced avocado, pea shoots, and radish.
