Leftover Salmon Rainbow Bowl

Remember that Garlic Honey Wild Alaska Sockeye Salmon recipe I made awhile back??

My favorite, and easiest, way to have leftover salmon is to simply re-heat the salmon in a cast-iron skillet with a few splashes of coconut aminos.  THAT’S IT!

Now, let’s talk about EATING THE RAINBOW:

Why is it important to eat the rainbow??

*Healthy from the inside out!
*The more colors you add to your meal, the more micronutrients you will consume; each color represents a different nutrients.
*Antioxidants, vitamins, healthy fats & protein are essential for skin repair!! You’ve heard you need to “eat to glow,” right? It’s totally a thing.

If you have been following along with me for awhile you know that I have acne-prone skin. Something I talk a lot about on my Instagram page. I have ALWAYS struggled with it, probably always will, and my old scaring is absolutely what I am most self-conscious about! I have been on everything from topical’s to oral meds.…most extreme being accutane. That was terrible on all levels. After all my trials and errors to date, the best remedy I have found is: EATING CLEAN, and EATING ALL THE COLORS!!! Whole & colorful foods are nourishing and essential for healing and getting that healthy glow we all desire.

It took me a long time to figure this out, but I’m so glad I did! It’s been a game changer.

FOOD FACTS:
*Raw fresh spinach {Iron, Calcium, Zinc, fiber }

*Raw zucchini noodles {Vitamin A & C, potassium, fiber}

*Purple cabbage {Folate, Vitamin K, Thiamin, antioxidants}

*Mushrooms { Protein, Thiamin, Vitamin B6, Folate, Iron}

*Red bell pepper {Vitamin C & E & K, folate, potassium}

*Hemp seeds {Protein, Omega’s, amino acids, copper}

*Wild Alaska Sockeye Salmon {Antioxidant amino acid taurine, Vitamin B12 & B6 & D, Omega-3 fatty acids, Protein}

  • Step 1 Heat salmon in a cast-iron skillet with a few splashes of coconut aminos.
  • Step 2 May steam the purple cabbage and sauté the mushrooms while the salmon is heating up.
  • Step 3 Combine everything in a bowl and enjoy!
