Healthier Lasagna with Mushroom Wine Sauce

Who made the most amazing healthier for you lasagna with mushroom meatsauce last night?!??? That’s right….I totally did!

Should be preparing for Spring, but whatever.  SO THICK. And my homemade Ground Beef & Mushroom Wine Sauce really brought it home!

You can use any lasagna sheets that you wish. I really love  @cappellos because they are Gluten-free, grain-free, paleo-friendly, and yes STILL delish! You really won’t miss regular lasagna sheets. I also really love using green lentil lasagne sheets. found on Amazon.

Healified Lasagna with mushroom wine sauce

Ingredients
  • 1 pound ground beef, I used @moinkbox ground beef
  • High heat cooking oil, I used @chosenfoods avocado oil
  • 1/2 onion, diced onion
  • 2-3 cloves garlic, minced
  • 8 oz mushrooms, sliced
  • 1-2 Tbl red wine of choice { I used cabernet } *Wine always optional: may sub broth or water.
  • Dried add oregano & red pepper flakes
  • Pink salt and pepper to taste
  • 1, 15oz can crushed tomatoes or fav marinara sauce I used @organicobello .
  • 1 Tbl. tomato paste
  • 1-2 Tbl. raw coconut sugar if desired
  • 1 package of @cappellos lasagna sheets
  • Cottage cheese of choice
Directions
  • Step 1 Cook ground beef first in a nonstick skillet, then drain{ to get the greasy out} set aside.
  • Step 2 Heat cast iron skillet & heat some cooking oil
  • Step 3 Add onion and sauté until translucent, about 5 minutes, then add minced garlic.
  • Step 4 Add sliced mushrooms, and wine or other liquid, and oregano & red pepper flakes.
  • Step 5 Add cooked beef to the skillet and season with pink salt & pepper.
  • Step 6 Add crushed tomatoes, tomato paste & raw coconut sugar.
  • Step 7 Bring to a simmer for about 20 minutes.
  • Step 8 LASAGNA LAYERS: Spray a baking dish with cooking spray. Mushroom & beef wine sauce, lasagna sheets, Cottage cheese. REPEAT 3X!
  • Step 9 Cover with foil and bake 30 mins on 350, uncovered last 10!
