Y’all know I love a good salmon bowl!

CONFESSION: I stayed away from pastas for YEARS. Literally, years. WHY?? Well, I always AFRAID of it. I put it in the “unhealthy” foods column, and wouldn’t touch it. I thought if I ate pasta it would KILL my diet, and leave me feeling lathargic and tired. Anyone else with me?!?  Glad I’m over that.

I will absolutely order the real deal out every now and then, but I’m so glad we live in a world now that makes healthier pasta options: like this @cappellos gluten free, paleo, almond-based fettuccini pasta.

And you know what?? This was my LUNCH!!!  I went back to work feeling just fine, and not weight-down at all. Love it! GIVE ME ALL THE PASTA!


Garlicky Pasta with Honey Glazed Salmon

Ingredients
  • Almond flour Fettuccine Pasta @cappellos
  • 12oz Wild Salmon
  • 8oz Baby bella mushrooms
  • Handful of cherry tomatoes
  • Ghee {or high heat cooking oil}
  • 2 garlic cloves
  • Red pepper flakes
  • Olive oil
  • ACV or red wine vinegar
  • Splash fresh lemon juice
  • Dijon mustard
  • Pink salt & pepper to taste
Directions
  • Step 1 For the Salmon: Heat skillet and spray with @chosenfoods Avocado oil, pat salmon fillet dry & season with pink salt & pepper, and coat with honey
. Cook face down 3 minutes, flip and cook another 2-3 mins. Depending on thickness.
  • Step 2 For the pasta: On the stove-top heat a non-stick skillet with ghee, AND also boil a pot of water for the pasta. 

  • Step 3 Cook fettuccine pasta 90 seconds, rinse with cold water and set aside. 

  • Step 4 In the hot skillet, sauté 1/4 diced onion for a few minutes, then add sliced mushrooms, cherry tomatoes, minced garlic, and red pepper flakes. Keep sautéing until tomatoes burst.
  • Step 5 Make the spring dressing: Whisk: Olive oil, ACV or red wine vinegar, splash fresh lemon juice, Dijon mustard 
Pink Salt @suncorefoods & Pepper

  • Step 6 Add cooked pasta to the skillet with spring dressing, and serve with salmon.
