I'm just gonna say it. I could eat salmon EVERY DAY!! It is by far my favorite fish and I never get sick of it!!
Baking the salmon like this is such a great way to meal-prep. I made this last week for myself to eat off of all week while Brent was out of town, and it worked out so well! I had it alongside a salad, one night with zoodles, then mashed all up for lunch and made a salmon salad out of it a few times.
You know what else? This is perfect for entertaining! It just takes a few minutes to whisk the sauce together, bake and BOOM, you have 5-6 servings! The clean up is minimal too; always a win!

Creamy Dill & Dijon Baked Salmon
This is great for meal-prep or for entertaining!
Ingredients
- 1 large boneless salmon fillet, skin on. { I used 1.75-2 lb. sockeye, I think King would be best}
- 2 tablespoons prepared Dijon mustard
- 2 tablespoons chopped fresh dill
- 3 tsp. teaspoon lemon juice
- 1 tsp. minced garlic
- Pink salt & pepper { I use about 1/4 teaspoon each }
Directions
- Step 1 Preheat oven to 400 degrees. Line a baking sheet with aluminum foil.
- Step 2 Pat the salmon dry with paper towels. Optional to cut into individual pieces, up until the skin. Spray lightly with cooking spray and place salmon fillet on a prepared baking sheet.
- Step 3 In a small bowl, whisk together the remaining ingredients. Pour on to the salmon fillet and spread mixture evenly all over.
- Step 4 Bake for 12 to 15 minutes, or until salmon flakes easily with a fork. Please note: baking time will differ depending on the thickness of the fillet.
- Step 5 The skin should stick to the foil as you scoop the salmon to serve. Enjoy!
