I seriously can’t believe it’s July!
Just in case you need a quick and festive side dish for the 4th check this out! CHILLED CRACKED FREEKEH SALAD.
Every heard of Freekeh?? It’s a nutty, high-fiber whole grain found in Middle Eastern cuisine. It’s young green wheat that has been roasted and cracked and I personally love the texture. It has a bit more bite than quinoa.
Anything you use brown rice or quinoa with, you can totally use Freekeh. Switch it up!
Chilled Cracked Freekeh Salad
The perfect festive side for the 4th of July..
Ingredients
- 2 Cups cooked cracked Freekeh { I used @bobsredmill }
- 1/4 onion, thinly sliced
- 1/2 cucumber, diced
- 1/2 Cup fresh blueberries
- 1/2 Cup cherry tomatoes
- A handful of fresh cilantro
- 1/4 Cup olive oil
- 1/2 lemon, juiced
- Pink salt & pepper
- Sliced jalapeños { if you want some heat }
Directions
- Step 1 Cook Freekeh according to the package and let cool completely.
- Step 2 Combine all ingredients in a bowl and chill before serving. Enjoy!
