Chickpea “Tuna” Salad Mash

When you need a quick, no-cook, protein-packed meal, this mash is for you!!! It’s one of my go-to’s and hope it will be yours too!

Have it alone, spread on toast, wrap in a tortilla, sandwich spread or in a salad bowl as I did here!

Put a few cans of chickpeas on your grocery list! This recipe is for one, but I like to make a bigger batch { with 2 cans} and keep in the fridge to use throughout the week! Hello, meal-prep!

Ingredients
  • 1/2 can chickpeas or cannelloni beans
  • 1 tsp. ground turmeric {I used @suncorefoods turmeric}
  • Splash lemon juice
  • 1-2 tsp. Mustard
  • 1 Tbl. Plain yogurt { I use @nancysyogurt }
  • Pink salt & pepper to taste
Directions
  • Step 1 Add all ingredients to a bowl and mash with a fork. Enjoy!
