Baked Veggie Jackfruit Taquitos

Funny story: When I made these Baked Jackfruit Taquitos, I added TWO Tablespoons of what I thought was enchilada seasoning, but was really CAYENNE PEPPER! Holy moly that first testing bite was FIERY! Managed to save them by adding some greek yogurt & raw coconut sugar to balance it out! When I say “some,” I really man A LOT!

Jackfruit has the same texture as shredded chicken and it gave these flautas great bulk & texture!! It contains a ton of fiber and it’s low-fat too! Full disclosure: I had to research the difference between Flautas & Taquitos so I knew what to call these babies! Both are typically fried, and the fillings are interchangeably the same. SO the difference? FLAUTAS= longer and thinner using burrito sized flour tortillas. TAQUITOS= shorter versions using smaller flour or corn tortillas! There you go!
ANYWAY, I love to meal prepped these, freeze them, and bake whenever I don’t feel like cooking!

Baked Veggie Jackfruit Taquitos

I love making Taquitos, then freezing them! Convenient for when you don’t have time to cook. Just pull from the freezer and bake!

Ingredients
  • Grainfree Cassava & Coconut Tortillas @sietefoods
  • 1 15oz can of Jackfruit
  • 1 Large zucchini
  • 1 Cup. Cauliflower rice
  • 1 Tbl. coconut oil
  • 1/2 onion
  • 2 Tsp. minced garlic
  • 2 Tbl. Enchilada or taco seasoning
  • 1/2-1 Cup tomato sauce of choice, I like @organicobello
  • 1/2-1 Cup grass-fed sharp cheddar cheese, plus more for toppings
  • Cooking spray
  • Sour Cream @greenvalleyorganics
Directions
  • Step 1 Heat a dollop if Coconut oil in large skillet
  • Step 2 Add 1/2 onion of choice, I used red
  • Step 3 cook 5 mins.
  • Step 4 Add minced garlic, and Enchiladas seasoning
  • Step 5 Grate zucchini and squeeze out as much moisture as possible using towels or paper towels. Add all zucchini to the mixture.
  • Step 6 Add cauliflower rice. {Use any veggies you have on hand}
  • Step 7 Add tomato sauce, and simmer
  • Step 8 Drain and shred can of Jack Fruit. Add to the mixture. Cover and cook for 5 mins.
  • Step 9 Once the Jackfruit is heated up, use a fork to shred the chunks and break them-apart
  • Step 10 Grate cheese and add to mixture. Stir until combined and turn heat off.
  • Step 11 Place all mixture in a strainer over a bowl to get all liquid out, if needed.
  • Step 12 Roll into tortillas and place seam-side down on a greased baking pan. I used @sietefoods Cassava & Coconut tortillas.
  • Step 13 When ready to cook, add more cheese on top if desired. Cover with foil and bake 20 mins. Bake uncovered another 10-15 minutes more until crispy. Serve with favorite toppings.
