Baked Chicken Parmesan Sandwich

Baked chicken parmesan is cool, but BAKED CHICKEN PARMESAN SANDWICH is next. level.

 

Undoubtedly, one of my favorite repurposed meals. This is what I created from leftovers during my lunch-break one day when I was in need of a quick meal. Without a doubt, I make chicken parmesan now JUST to have the leftovers for a sandwich!

 

Also, it’s so simple! You cook the sandwich like you would a grilled cheese! Yes, please. Not only that, but it requires extra cheese that acts as the glue, and you have yourself an amazing sandwich. I’m sorry, but anything that requires MORE cheese is something that I’m extremely into. How about you?

 

How to make the most delicious Baked Chicken Parmesan Sandwich:

 

The first step in making this epic sandwich is making my traditional Baked Chicken Parmesan recipe. Once you do that, it takes five minutes to make the sandwich.

  • First, heat a skillet to medium-high heat. Meanwhile, get your sandwich bread of choice prepped. I like using thick Sprouted Grain English Muffins.
  • Second, butter the outside of each slice.
  • Third, layer: take one slice and place butter-side down on the hot skillet. Then add either a slice or shredded mozzarella cheese, the leftover baked chicken parmesan breast (sliced to size), then more cheese then top with the last slice of bread, butter-side up.
  • Finally, cook for 3-4 minutes each side until golden brown. You might need to add a grill press to weight on top of the sandwich as it cooks.

 

This recipe is meal-prep worthy!

 

Obviously, I’m passionate about this recipe, but not only that it’s perfect for meal prep. It’s so convenient to make a big batch at the beginning of the week and incorporate it in various ways.

 

I love having the baked chicken parmesan breasts already cooked and ready to go. To heat up the next day, add more mozzarella cheese on top of the baked chicken parmesan breast if you wish, and pop under the broiler for just a few minutes.

 

By the way, this is not just for dinner, folks! For example, I love having the baked chicken parmesan sandwich along with a side salad for lunch.  Not only is it a guilt-free version of an indulgent meal, but it’s completely satisfying.

Baked Chicken Parmesan Sandwich

Ingredients
  • Chicken breast { @moinkbox has the best chicken! }
  • 1/2 cup pasta sauce { I used @organicobello }
  • 1/4 cup cheese { I used dairy free @daiyafoods }
  • 1/4 cup breadcrumbs of choice { I blended some @simplemills almond flour & sea salt crackers + garbanzo flour + flaxseed: use what you have}
  • 1 egg
  • Cooking oil @chosenfoods avocado spray
  • 1 bun or English muffin of choice
Directions
  • Step 1 Place chicken in a large ziplock or cover completely in plastic-wrap. Pound chicken breast thin, about 1/2 inch thick. You might need to slice them in half if they get too large.
  • Step 2 Get a cast-iron skillet hot and add some cooking oil. Make TWO bowls: one bowl of bread crumbs and the other bowl with the whisked egg.
  • Step 3 Coat chicken in breadcrumbs, then in the egg mixer, then directly to the skillet. Cook 3-4 minutes each side.
  • Step 4 Place the chicken breast in a sprayed baking dish. Top with pasta sauce and cheese and cover with foil.
  • Step 5 Bake on 350 for 20-25 minutes. Remove foil at the end and broil on high to get the cheese golden brown. **Cooking time varies depending on how many breast you make!
  • Step 6 Right away, or even the next day, toast your favorite bun or english muffin and melt more cheese on both sides. Add one of the baked chicken parmesan breasts and there you have it. ENJOY!
