Paleo Savory Sweet Potato and Tuna Waffles

The only thing I made for meal-prep this week was this mixture, and I’m telling you, it’s super easy!

Seriously, took 3 mins. This is perfect for lunch or dinner...heck, I would even eat this for breakfast. This savory waffle recipe is insanely delish, the perfect balanced meal with healthy carbs, protein, and healthy fats. What else do you need???

Paleo Savory Sweet Potato and Tuna Waffles

Ingredients
  • 1 large baked sweet potato
  • 1 can of tuna {I use @natural.sea no-salt }
  • 1 Tablespoon fresh chives
  • 1/4 red onion diced
  • 1 Tablespoon lemon juice
  • 1 tsp. Djion mustard
  • Splash of Olive Oil
  • Pink Salt and pepper to taste
Directions
  • Step 1 Combine all ingredient in a bowl.
  • Step 2 Add a serving to a waffle maker, and cook for about 3 minutes.
  • Step 3 Serive with you favorite savory topping! I love avocado, red pepper flake, and a drizzle of olive oil.
