One-pan Turmeric Lemon Harvest Hash

 

Thanksgiving is around the corner, Y'all, can you believe it??!! Are you all about the Turkey, or the sides??

Just give a plate of festive fall sides, and I'm a happy camper!!

But let's be honest, it's hard to get our veggies in this time of the year, am I right?? I purposely made this Fall Harvest Hash with that in mind. It's a festive and tasty way to get your veggies in, evening during the holidays.

Whether you need a side to accompany that big ol' bird you're making, or it's a "clean out the fridge" kind of night, this will do the trick!

I've partnered with Cocavo to create this delicious side dish for the holiday season, and the Cocavo Turmeric & Lemon flavored cooking oil gives this dish such a fresh and clean twist.

It's easy to toss together, and as a bonus: it's dairy-free, gluten-free, and FULL of anti-inflammatory goodness.  We could use this around the holidays, right??

This recipe is just a few easy steps, with zero clean-up since it's in one-pan! HALLELUJAH! Whisk, chop, and roast. Easy-peasy.

First, chop all your veggies into bite size pieces. I like to trim and cut the brussel sprouts in half, then make everything else about the same 1/2' size.

By the way, I found the most beautiful purple brussel sprouts at the grocery store! Love seasonal produce and this gorgeous color!

Transfer all the veggies to a sheet pan, and whisk together ingredients for the roasting vinaigrette!

I love how vibrant the Cocavo cooking oil is, not to mention the health benefits. This coconut oil & avocado oil blend is perfect for this recipe since it consists of high-heat cooking.

Both avocado oil and coconut oil have a high smoke point compared to other oils. It's the PERFECT healthy oil for both roasting and cooking on the stove-top.

Once you whisk the vinaigrette together, pour all over the veggies and toss to combine. How easy is that?!

Roast in the oven for 20 minutes on 400, or until soft and toasty.

*Optional: I like to turn up the heat {425} for the last 3-5 minutes to get extra crispy.

You may also use the broiler for this for about 1 minute, HOWEVER, do not take this time to walk away and do something else....like a loaded of laundry, for example.

Just stick around and monitor the toasty goodness. That broiler setting is fast, and I learned the hard way by burning my first round! {Sigh}.

BOOM! That's all, folks! Serve in a serving bowl, sprinkle with pumpkin seeds and pomegranate seeds and, Enjoy!!

One-pan Turmeric Lemon Fall Harvest Hash

This one-pan fall harvest hash is the perfect addition to your Thanksgiving spread, or any meal for that matter! It's easy to put together and the Turmeric Lemon Cocavo cooking oil give it a fresh and clean twist!

Ingredients
  • Roasting Vinaigrette:
  • 2 Tbl. Cocavo Raw Extra Virgin Coconut & Avocado oil with Lemon Turmeric, melted
  • 2 Tsp. lemon juice
  • 1/2 Tbsp dijon {or mustard brown}
  • 1 Tbl. pure maple syrup {or honey}
  • 1/4 tsp turmeric
  • 1/2 tsp. fresh or dried thyme
  • 1/4 tsp. garlic powder { or 1 garlic clove minced}
  • Pink salt to taste
  • Hash:
  • 2 medium sweet potatoes, cubed 1/2”
  • 1 lb Brussel sprouts, cut in half
  • 1 small delicata squash, seeds removed and sliced into 1/2 in. pieces
  • Garnish:
  • 1/4 C. raw pumpkin seeds
  • 1/4 C. fresh pomegranate seeds
Directions
  • Step 1 For the Roasting Vinaigrette, combine all ingredients in a bowl and whisk together to combine.
  • Step 2 Preheat your oven to 400 degrees and line a large baking sheet with parchment paper or use a good roasting pan.
  • Step 3 Spread the chopped brussel sprout, sweet potatoes, & delicata on the baking sheet.
  • Step 4 Pour the Roasting Vinaigrette over all the veggies and toss to coat.
  • Step 5 Roast in the oven for 20 minutes or until soft and toasty. I like to turn-up the heat {425} for the last 3-5 mins. to get extra crispy. May also use the broiler for about 1 min.
  • Step 6 Serve in bowl, sprinkle with pumpkin seeds and pomegranate seeds. Enjoy!
