I GOT YOU! These Harissa Red Lentil Patties are so tasty, even my meat-and-potatoes-loving husband loved them. Huge win!

 

With the Summer holidays coming up that means ALL the cook-outs and backyard parties, am I right? Such a fun time of year. and I personally LOVE creating summer menus, and I am ALWAYS in need of a meatless option.

SO, you can thank my vegetarian sister for this one, y' all! It is FULL of protein, thanks to the dried red lentils I used, AKA pulses.

 

Have you heard of the term pulses?? They are dry peas, chickpeas, lentils, and beans!

 

I love them because they are a delicious and healthy way to bulk up ANY meal with protein and fiber! If a batch of cooked pulses arent on your meal-prep list, they need to be!!

 

Pulses are a must-have in my pantry for quick and nutritious meals.

Here's what you will need for the patties:

Dried red lentils

Harissa

Tahini

Flax egg  *OR 1 egg if not vegetarian*

Carrots

Red onion

Garlic

Cumin

Lemon juice

Olive oil

Cilantro

Red pepper flakes

Pink salt pepper

 

I should have called these "Clean-out-the-Pantry Patties," since that's what I basically did!!

Once you cook the lentils, combine ALL  ingredients into a bowl and form them into patties.

 

They could not be easier!! I loved having them on a whole wheat bun with my quick Herbed Yogurt Sauce. Let me know if you try them!

Harissa Red Lentil Patties with Herbed Yogurt Sauce

These patties bring the flavor and are full of protein! Perfect for a quick weeknight meal.

Ingredients
  • 1 Cup dried red lentils, cooked
  • 1 heaping Tbl. Harissa paste
  • 1 Tbl. tahini
  • 2 Tbl. of ground flaxseed {flour or breadcrumbs would work}
  • 2 carrots, shredded
  • 1/2 red onion, diced
  • 2 cloves garlic { 1 Tsp. minced garlic }
  • 1/4 Tsp. cumin
  • 1/4 Tsp. paprika
  • 1/2 lemon, juiced
  • 1 egg { or flax egg if vegetarian}
  • 1 Tbl. Olive oil
  • 1/4 Tsp. Red pepper flakes { if you like it spicy }
  • 1/4 Cup chopped cilantro
  • Pink salt pepper to taste
  • *
  • 1/2 Cup Greek yogurt
  • 1 garlic clove {1/2 tsp. mined garlic }
  • 1/2 lemon, juiced
  • 2 Tbl chopped cilantro
  • 1 Tbl. chopped dill
Directions
  • Step 1 Cook the dried lentils according to the package. Set them aside to cool completely.
  • Step 2 To a bowl, combine all ingredients for the patties with the cooked red lentils. NOTE: you may need to add more flaxseed/or flour as needed. Make patties out of the mixture.
  • Step 3 Heat a cast iron skillet with coconut oil and cook the patties for 4-5 minutes each side. May cover with a lid while cooking.
  • Step 4 Meanwhile, mix all Herbed Yogurt ingredients together in a bowl.
  • Step 5 Remove patties from the skillet and let them cool for a few minutes. Serve on a bun with the Herbed Yogurt Sauce. Enjoy!
