Fresh Herbed Quinoa Fritters

 

Alrighty, these HERBED QUINOA FRITTERS are no joke! If you have leftover cooked quinoa, you should totally make these!  I even loved them cold the next day in a salad bowl.

Fresh Herbed Quinoa Fritters

If you have leftover qunioa, these are perfect! The lemon juice and dill completely bring the flavor.

Ingredients
  • 2 cups cooked quinoa
  • 2 Tbl. Greek yogurt
  • 1 Tbl. Lemon juice
  • 1 Tbl. Avocado oil @chosenfoods
  • 2 tsp. minced red onion { I used a small grater to get it fine }
  • 2 clove garlic, minced
  • 1 egg
  • 2 Tbl. of garbanzo flour { any flour will do }
  • 1/2 cup crumbled sheep's milk feta
  • A handful of cilantro and dill, rough-chopped
  • Pink salt & pepper to taste
  • Coconut oil for cooking
Directions
  • Step 1 Mix all ingredients into a bowl to combine.
  • Step 2 Heat a cast iron skillet on high and melt coconut oil.
  • Step 3 Scoop a serving of fritter mixture with an ice cream scoop into the skillet, and pat flat with a spatula. { I cooked about 3 at time }
  • Step 4 Cover and cook 4-5 minutes each side. Makes about 8-10 fritters.
